Urban food security and value addition

This project is about improving food security in Kisumu City by generating knowledge that will be useful in minimizing food that goes to wastage and using that which has gone to waste as manure for food production. It uses systems thinking and coproduction as a methodological approach.

This project is about improving food security in Kisumu City by generating knowledge that will be useful in minimizing food that goes to wastage and using that which has gone to waste as manure for food production. It uses systems thinking and coproduction as a methodological approach. 

The goal to be achieved in this project is the improvement of food security through minimization of food waste/loss, and utilization of organic waste. It also considers promotion of urban agriculture to increase food production. 

It is to identify the major causes of food waste at the household level and recommend solutions. It forms the basis for undertaking comparative study on food value chain and conservation in collaboration with the CTLIP and GOLIP through Stadslandt/Stadslandet/Urban Rural Gothenburg.

1. Baseline survey on flow of food materials (Minimization of waste generation from food) 
2. Waste value chain 
3. Food preservation and storage 
4. Waste generation and composting 
5. Waste conversion into animal feed making
